Apr. 23 - Stuffed chicken breast

Another night of dinner sans the boy, so we made it another easy one. I heated up a chicken breast stuffed with broccoli (one of those Barber Foods breaded ones) and made Linds some dinosaur nuggets and french fries. There's a coupon available for them, too! Back to normal dinners tomorrow :)

This was a very good recipe -- I would probably use bleu cheese/feta cheese or something with a little more taste the next time - I did not think I would enjoy with the tomato soup but it was really good.

This was awesome. Made the stuffing added some parm to it. Instead of stuffing into chicken breasts I layered it over what I left from a beer can chicken and put on the grill for about 10 min.

I'm cooking for my mother and my brother tonight, and I was planning on making Apple Stuffing, stuffed Chicken Breast. I wanted a starch or grain and a vegetable/salad side, but I want it to taste good and fit with the dish. So what two side dishes would you recommend?

I subsituted grated tofu for sour cream and skipped the bacon. Topped with cheese for a healther meal. :)
