Bisquick "Melt in your Mouth" Pancakes
Ingredients
2 cups Bisquick
1 cup milk
2 eggs
1 tablespoon sugar
2 teaspoons baking powder
2 tablespoons lemon juice
1 teaspoon vanilla extract
Directions
- Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening.
- Stir all ingredients until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle.
- Cook until mixture bubbles. Turn; cook until golden.
- To keep warm, place in single layer on cookie sheet. Cover with aluminum foil, and place in 200°F oven up to 10 minutes.
I also made a breakfast for tomorrow's MOMS Club event - a Bisquick bacon quiche. I don't think it's "screw up"-able, but we'll see tomorrow! Here's that recipe:
Bisquick Bacon Quiche
Ingredients
1/4 cup melted butter
1-1/2 cup of milk
1 teaspoon salt
dash pepper
3 eggs
1/2 cup Bisquick
1 cup shredded sharp cheddar
1/2 cup bacon (about 7 slices) -- cut or broken into small pieces.
Directions
- Mix first 5 ingredients together and beat well (wire whisk works well).
- Stir in Bisquick.
- Pour into 9 inch (deep) cake pan.
- Put in meat and cheese on top of mixture (do not mix).
- Bake at 350 degrees for 45 minutes.
